 Chettinad idly milagai podi. 

Chettinad idly milagai podi is prepared by various quantity of urad dal, Chana dal and toor dal all items are roasted in low flame Until golden brown in color. Roasted ingredients are allowed to cool and grind them to make coarse  powder. This podi will give nice aroma and flavour and it taste different from normal podi.

When you are running out of time to prepare side dish for idly or dosa, mix a spoon of idly podi with gingerly oil to make paste.

Chettinad idly podi for dosa or idly

Ingredients for making idli podi

Urad dal       - 1 cup
Channa dal  - 1 tablespoon
Toor dal.       - 1/4 cup
Red chilli.     - 12 no’s 
Curry leaves  - few
Garlic             - 5 pods
Salt                 -1 tablespoon
Asafoetida.      - 1 tsp

Instructions for making idly podi

Dry roast all the ingredients in low flame until golden brown in color. Allow them to cool. Transfer to the mixie jar and grind them coarse powder. Store Chettinad idly milagai podi in air tight container and you can use them for a month.

Note

Don’t roast the ingredients in high flame and switch off the flame once it is golden brown in color.
